This month we have donned our learning hats and delved into all sorts of new subjects; we have learned why Melita’s Table came to be, the difference between a burrito and a chimichanga, and how to pack easy vegan school or work lunches. Last on our list of new things to learn this month is how to make a fun and easy vegan dinner that is sure to please young and old alike. This vegan tater tot creation was a HIT in my house with the teen kiddos.
Vegan Tater Tot Nachos
This plate of yum is otherwise known as “Totchos.” Totchos use tater tots as a base and then a pile of delicious veggies, beans and a decadent sauce are added. I have included a few fun additions to these totchos; no one will guess they are vegan! The great thing about this recipe is that it is totally customizable. Add ingredients that you love, get creative and have fun making your own vegan tater tot nachos!
Vegan Totchos
1 package of tater tots (based on how many you are feeding, maybe 2 packages)
1 batch of Oh She Glows Vegan Cheese Sauce
½ cup prepared salsa
1 can black beans
1 cup chopped tomatoes
½ cup chopped red or yellow peppers
¼ cup chopped green onions
½ cup corn
¼ cup cilantro
Other “Let’s get crazy” ingredients: organic corn chips, smoky tempeh bacon, spicy salsa, hot sauce, lentil taco meat
Bake tater tots according to directions on the package. When tots are almost done, heat black beans, add salsa to cheese sauce and heat. Layer tots on serving plate and top with remaining ingredients, pour on cheesy salsa sauce. Add more or less of each ingredient according to your tastes. Eat with a fork and be amazed!
